Jillgie and Chinese cabbage (RealVideo available)

Jillgies are commonly known as large prawns

Ingredients

1 kilo of Jillgies
4 tbl soons of sweet chillie sauce
1/2 tsp spoon of diced fresh ginger
1/2 tsp spoon of crushed garlic
1/2 chinese cabbage

Preparation
Jillgie and Chinese cabbage.
This is my best fresh water dish. The only problem is getting the Jillgies I know you can buy them in Broome but you do have the option to use Marin or Red Claw but I don't know if they have the fat in there heads as I haven't tried them out.

  • Ok just pull the heads off the Jillgies and set aside

  • Scoop the fat out of the heads in a bowl

  • Add 4 spoons of sweet chilly sauce

  • Half a tea spoon of ginger and garlic smaller amounts if you don't have that many Jillgies its up to you

  • Then stir this all together to form a sauce

  • Half of a Chinese cabbage cut thin

  • Then peel the Jillgies now you have to clean the vane just like a prawn


Cooking
  • Heat a pan or BBQ plate throw the Jillgies on and give them a 2 minute cook

  • put the Jillgies sauce on top of the Jillgies let this cook for a minute or two until the sauce gets thick

  • Last throe the garbage on top fore a minute and then serve
