Pearl Meat (RealVideo)

Broome Dish - Pearl Meat is only really available way up north.

Ingredients

Clove of chopped garlic
1 tbl spoon of diced fresh ginger
2 or 3 spring onions diced
1 tsp of cooking oil
1/2 kilo pearl

The first dish I have on the menu is Pearl Meat with garlic ginger and spring onions. This is a meal on its own. If you can get a good supply of pearl meat and afford it Pearl meat retails at around $120 per kilo.

eg: my brother in law is a Pearl Technician and is my major supply source, but at certain times of year there is the option of getting it from the ocean around the Broome coast line. This is a lot of hard work and apparently unlawful as there are restrictions put in place, for the harvesting of Pearl shell by the fisheries department so this is at you own risk.

  • First Cook your Garlic and ginger in a bit of oil, until the garlic starts to pop

  • Then just put in your spring onions. 2 or 3 cut thin this is best or to your liking

  • Then cook this with the garlic and ginger for around 3 minutes

  • Then you're pearl meat this should be put in last

  • A good trick is to cut your meat thin not only will it go further or at least look that way but cook better

  • This should be cooked in there no longer than two minutes

  • The meat will go a white color when cooked

  • If you leave it to long it can get tough and that's what you don't want

  • Total cooking time 3 to 4 minutes


  • Now you can substitute the Pearl Meat with clam, abalone, squid or cong this will change the taste.

    You just can't beat the real thing but some take second best.
