Chilli Crab

Ingredients
1-2 Crabs (uncooked)
2-3 fresh red chillies
2-3 cloves garlic;
1 tsp cornflour
1 cup water
3 tbsp oil
1 tsp salt
pepper
1 tsp soy sauce
(*) optional - shallots (handful)
Method
- Place crab in esky/freezer for ½ hour - to settle crab down/put to sleep
- Steam crab (whole) in 1 inch depth of salted water; or cook on coals
· steam in large pot (high heat) for 25-35 mins
· cook on coals (both sides) for 15-20 mins - Break off claws and legs - crack shell of legs & claws; clean inside of main cavity and break into sections
- Chop garlic and chillies finely and cook in oil (don't burn garlic); (*)
- Optional: throw in chopped shallots
- Throw in crab pieces, mix through thoroughly making sure all crab looks coated
- Add soy sauce, salt & pepper. Toss all this around again. Put lid on (low heat), cook for
- 5-7 mins, stirring once
- Add mixture of cornflour & water - stir in well. Cook until mixture slightly thick
