Fish Darwin Style

Ingredients

1 large saddletail Snapper or just any Snapper will do
Lemon Grass
1 tomato
blob of butter
1 tbl spoon of diced ginger
1 tbl spoon of light soy
2 tbl spoons of sherry
2 tbl spoons of Mirrin (rice wine)
1 tbl spoon of diced shallots
1 tbl spoon of corn flour
alfoil

Method

  • In the scaled and gutted fish, place a platted lemon grass sprig and sliced tomato

  • make slits in the skin on both sides of fish

  • smear with butter

  • wrap in alfoil (or if you want to be traditional wrap in paperbark)

  • place the wrapped fish on hot coals, fire or grill

  • while fish is cooking, combine ginger, soy and sherry, rice wine in a pot and simmer

  • mix cornflour and water to make a smooth watery substance and add to mixture in the pot

  • stir on heat until it is a thicken sauce

  • add shallots and stir

  • unwrap fish and pour sauce over the top
