Crispy Goose in Kakadu

Ingredients
1 Magpie Goose (Found in the Top End - Swamp Bird)
1 lemon
ground pepper
half a cup of soy sauce
Method
- Make marinade by combining lemon juice, soy sauce and pepper
- pluck and gut Magpie Goose
- cut up goose into reasonable sizes for like you would a chicken
- place in pot or large frying pan and cover with marinade
- leave for however long you like - but no less then a couple of hours
- on your BBQ, grill or open fire - make it very hot. Make those coals glow
- Place the goose a in a grilling wire - place over coals or fire until browned
- keep turning until cooked through
- remove from fire - place on a plate
- cover with the rest of the marinade and squeeze more lemon juice on both sides
