Fried Rice with Lupchong with complimentary Green Sea Turtle
Fried Rice made with egg, bacon, shallots, bean shoots and lupchong (Chinese Pork Sausage)Green Sea Turtle - marinated and BBQued.

Cooking time: About 20 minutes.
Ingredients
Fried Rice
1 onion chopped and diced
1 garlic glove chopped fine
2 - 3 rashors of bacon diced
1 cup of chopped lupchong
(Lupchong is also known and Chinese Pork Sausage)
2 - 3 cups of steamed rice. Make sure you steam the rice the night before and refrigerate to stop the rice going gluggy)
2 -3 capfuls of Mushroom soy sauce
Half a cup of chopped shallots
Handful of Snowpea sprouts
2 -3 eggs
Marinated Green Sea Turtle.
The Green Sea Turtle was a staple diet for islander and main land Aboriginal people. You can't buy Green Sea Turtle. It is only hunted by Indigenous people within their respective regions. This recipe is really to illustrate the diverse nature of Aboriginal and Torres Strait Island diet and food.
Marinate the turtle overnight in
Cup of Mushroom soy
Cup of Sweet Soy Sauce
2 -3 teaspoons of diced garlic
3 teaspoons of ginger
2 - 3 teaspoons of diced chilli
Juice of half lemon
Tablespoon of curry (optional)
Dash of oil and
a sprinkle of sugar to bind it all together.
Method
- Fried Rice
- In a wok or pan - fry the onion and garlic until beginning to turn transparent
- Add the diced bacon and cook together
- Add the Lupchong and keeping stirring and cooking
- Add the steamed rice that makes up a pasta serving bowl amount and stir into the onion, bacon and lupchong
- Over the top of the rice add 2 - 3 capfuls of Mushroom soy and mix well
- Beat up the eggs and make an omelette. Chop omelette in to bite size pieces and add to the rice mixture
- Throw in the shallots and a handful of sprouts for texture and colour
- Turn off heat and put lid on (to keep warm)
* Turtle/Chicken/Pork or Beef can be cooking at the same time.
- Cover the turtle pieces with the marinate, cover dish and leave overnight in the fridge
- Place on the BBQ and cook through
- Place a big scoop of fried rice with a healthy serving of Turtle and there you have it - Fried Rice with Lupchong with complimentary Green Sea Turtle.
As turtle is a protected species and can only be hunted by the traditional people of the region - try using chicken, pork or thin strips of beef.
