Snapper Wings from Jacko's Paper Bark Kitchen

Snapper caught fresh from the river and cooked up on an open BBQ - battered and served up with Salad and Rice. Very healthy.

Cooking time: About 40 minutes.

Ingredients

Snapper Wings
4 x Snapper Wings - Often the sweatest meat of the fish. Can be bought with the fins and filleted.
1 cup of plain flour
Salt
Pepper
Curry powder if you want to (for taste and colour)
Oil of your choice to cook on hot pan

Rice
Two cups of Jasmin or white rice
Water to cover rice 2:1
Salt
Dash of oil

Salad
Ice Lettuce
Cheese cubes
Carrot Strips
Tomato
Celery
and for added taste
Shallots
Sprouts and any added elements of your choice

Method

Mix flour, salt, pepper and curry powder together
Coat the Snapper wings in flour
Pour oil into frying pan and make pan very hot - when the oil shimmers its ready to go.
Place the Snapper Wings into frying pan and press the fish flat as possible to get even heat throught the fish.
Keep turning the fish over to avoid burning the wings. The fish is cooked once the meat turns white

Rice
Cook rice as you normally do

Salad
While Snapper Wings are being cooked - toss your salad

Once the Snapper wings are cooked
Drain off oil from fish and place on an asorbent paper towel to take away all the extra oil.

Add rice and salad to a plate with the Snapper Wings - squeeze lemon on the fish to compliment the fish.
