Snow White Namas

This is a variation to Jacko's Namas Recipes at:

Degree of difficulty: Low
Preparation time: 30 minutes

Ingredients

White onion, sliced in rings
Pepper & salt
Queenfish fillets (or trevally or other pelagic species)
Red and green chillies (how many is your choice)
Ginger & garlic
Vinegar
Lemon, sliced
Cocnut flesh from young coconut (called Yellow Cocnut in the Territory)

Method


  • Place onion rings at the bottom of a bowl

  • Finely slice fish fillets and layer on top of onion

  • Add ginger and garlic and then pour vinegar into bowl

  • Dice up the chilies and sprinkle over fish and other ingredients (Not too much, just enough to come up halfway in the fish layer)

  • Add chopped red and green chillies and lemon slices

  • Open a yellow coconut and scoop out flesh

  • Sieve through a muslin cloth to create "snow" over the namas dish

  • Chill for 30 to 40 minutes

  • Best served with good beer
