Santa's Squid Stockings

Preparation time: 30 minutes
Cooking time: 15 minutes
Ingredients
Squid tubes, cleaned
Ginger, finely grated
Garlic, finely chopped
Onion, finely chopped
Cornflour or Breadcrumbs
White Wine
Toothpicks
Method
- In a saucepan, sauté ginger, garlic and onion until soft
- Add splash of white wine and reduce
- Sprinkle in cornflour or breadcrumbs until mixture holds together
- Cool slightly then spoon mixture into squid tubes and secure with toothpick
- Brush "stockings" with olive oil and place under a grill or barbeque; (but not too long or those "stockings" become boots!)
- Serve with ABC Soy Sauce or hoisin sauce
- Alternatively create another dipping sauce by combining lemon juice, vinegar, mushroom soy and chopped chilli
