Smoked Eel Patties

Native Australian fish cakes

Preparation time: 30 minutes
Cooking time: Frying time - 5 minutes

Ingredients

250 mg Smoked eel meat skin off and break into small pieces
200 gram boiled sweet potato
2 tablespoons lemon myrtle
one egg yolk
mountain pepper to taste
a handful of fresh chopped dill
2 teaspoons of cornflour
Plate of cornflour to coat patties
Macadamia oil

Method

1. Combine all ingredients (not plate of cornflour). You don’t want it to be too wet (should be sticking together).

2. Roll into little balls about size of a golf ball, flatten to form a pattie shape and roll in plate of cornflour.

3. Fry in Macadamia Oil

4. Should make around 12 (4 each)
