Wallaby Lasagne

Australian native lasagne made with minced wallaby rump steaks and macadamia nut oil with native basil, salt bush and pepperberries.

Preparation time: 15 minutes
Cooking time: 30-40 minutes

Ingredients

Pre made lasagne sheets
1kg wallaby meat, minced
2 onions, chopped
native basil
salt bush
tinned crushed tomatoes
native pepper
macadamia oil

Basic Béchamel/White sauce
flour
butter
milk
grated cheese

Method

Chop onions, fry off in oil. Add wallaby, fry off. Then add tomatoes and herbs and simmer for 40 minutes. Let this cool.

In the meantime, make the béchamel sauce.

In a baking dish, layer bottom with lasagne sheets, then a layer of the wallaby meat, then the white sauce, then sprinkle with cheese, repeat this layering about 4 times.

Cook in a moderate oven for 30 to 40 minutes.
